Seasons of Salt: Chef Tatung highlights importance of salt in cooking
Renowned Chef Myke “Tatung” Sarthou of Agos Restaurant shared his insights on the importance of salt in cooking during his presentation at Madrid Fusion Manila.
The chef, who declared that “salt is the cornerstone of taste and flavor,” highlighted salt through a documentary called “Seasons of Salt”.
The short film was produced specifically for the presentation where Sarthou interviewed artisan salt producers like Aro-En Salt.
He also added how the country imports its salt supply.
“I was doing a lot of research on Philippines salt, and it’s very sad to note that for a country like the Philippines with one of the longest shorelines, we import up to 80% of our salt that’s sold in the Philippines”, ABS-CBN News quoted the chef.
